Happy Halloween!

Happy Halloween! Halloween is all about getting dressed up and celebrating the spooky goodness. And hopefully by this point you have all figured out what you are going to dress up as. But if not, I'm here to help! Personally, I still have no idea what to wear while handing out candy to all the kids in the neighbor hood. But, I have a feeling this list of last minute easy costumes from Real Simple is bound to help me (and you) figure out what to wear!

  • A green clown wig + a schoolgirl outfit = Broccoli Spears
  • A plastic laundry basket with holes cut out for legs + white balloons + a shower cap = Bathing Beauty
  • A white dress + a pipe-cleaner halo + leaves in her hair and “dirt” on her face = Fallen Angel
  • Black clothes + yellow electrical tape down his torso + toy cars + Velcro =Highway
  • A pig nose + a blanket = Pig in a Blanket
  • A blue T-shirt + cotton balls + tape + a water gun = Partly Cloudy With a Chance of Rain
  • A polo shirt + khakis (or madras shorts) + a name tag = Jay Crew
  • A clear umbrella (preferably dome- shaped) + party streamers or metallic ribbons = Jellyfish

Midnight Snack

Let's face it, at the end of a long night of partying and boogieing on the dance floor, all you want to do is eat again. I know you are trying to avoid that late night eating and so are your guests, but trust me, they will thank you! I love the idea of providing guests with a little snack box as they are leaving. It's perfect for the car ride home or even to munch on in the hotel room. What's so great about this though, is you can make it relatively simple or you can go completely over the top! My absolute favorite idea though is the couple that ordered Whataburger for there guests at the end of the night! Some other options, ordering pizza, slices of cake, sub sandwiches, or an assortment of cheese and crackers. Would you do a midnight snack for your guests? What would you give them?

Delightful Dining {White Chicken Chili}

What's more fall than chili? The answer, nothing. Let's face it, cold weather calls for something warm, hearty and delicious. So the other night, in a quest for such a dish, I stumbled across this recipe on Pinterest none the less. Not only did it sound major delish, it was crazy easy. Seriously. Dump everything in a pot, cover and let simmer for 30 minutes. Done. That's it. No joke. Oh and plus, it's pretty good for you! I bet you're intrigued now. And seeing as you are now so intrigued, I will share the recipe with you! 

Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, diced
  • 2 cups cooked chicken (I boiled my own chicken, but after that was done R suggested I should have just used can chicken, which probably would have saved some time.), shredded
  • 2 cans Great Northern Beans, drained and rinsed
  • 1 can corn, drained
  • 1 can (4 ounces) green chilies
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1 box (32 ounces) chicken broth
  • Kosher salt (to taste)
  • Pepper (to taste)
  • 1 lime, juice (I may have skipped the lime because honestly I just don't remember. Either way it was good!)
    Directions:
    1. In a large pot, saute the onion and cook until it starts to become translucent.
    2. Once the onion is done, add shreds of chicken, Great Northern Beans, corn, green chilies (with juice from can), cumin and oregano to the large pot. Stir to combine all of the ingredients and then add the chicken broth.
    3. Bring to a boil and simmer for 20-30 minutes to allow the broth to reduce. Add salt and pepper (to taste) and juice from one whole lime. (You can add 1/2 cup of chopped cilantro if you desire. I personally don't like cilantro so I serve it as a side.)
    4. Leave simmering on stove until ready to serve.
    5. Serve with sour cream, chopped cilantro, shredded Pepper Jack cheese, avocado or tortilla chips.

    All Mixed Up {Vanilla Pear Drop}

    There is nothing I love better than creating a new delicious cocktail! And, boy do I have a treat for you, a Vanilla Pear Drop. Interesting right? Well here it is. Pear nectar, vanilla vodka, and a vanilla sugar rim. That's it and it's the perfect fall treat. It's utterly delicious and full of hints of fall flavor.  Here's what you'll need...

    {1} 2 oz. Vanilla Vodka (I use Cupcake)
    {2} 4 oz. Pear Nectar
    {3} Vanilla Extract
    {4} Sugar

    {Step 1} Dip the rim of your glass in vanilla extract then roll it in the sugar.
    {Step 2} Combine the vodka and pear nectar in a shaker and mix.
    {Step 3} Pour over ice and enjoy!

    The Art of the Pumpkin

    Last week I showed you mine and R's pumpkin. And while for us, it was quite the artistic endeavor, compared to these people, our pumpkin looked like it was carved by a 5 year old. And I only say 5 year old because a 3 year old should probably not be handling a knife. Anyways, if you haven't carved your pumpkin already, here are some done by some people much more talented than myself.     This Week I Feel...Spooky

    Happy Halloween! Almost. Halloween is exactly a week away and whether you are throwing your party this weekend or on Monday, it's time for a little inspiration for your spookiest bash yet! Set the spooktacular scene with spider webs draped over all the surfaces in your house. Turn off all the lights and light the way by candlelight. My favorite part about a Halloween bash though is all the creepy things you can do with your food! I love that skull wrapped in prosciutto and the viles filled with red shots and labeled as blood. Even better, the cupcakes with shards of "glass" and dripping in "blood"!  How are you celebrating Halloween? Party or Trick-or-Treating?

    Party Essentials {Halloween}

    Halloween is a week from Monday which can only mean one thing...Halloween Party! And while I'm giving you all the Halloween inspiration you need on Monday, today I wanted to give you my Halloween party essentials. No matter if your party is meant to be scary or just fun, here's what you need! 

    {1} Green Light Bulbs: Whether you put them outside or in, they give off an erie glow perfect for the occasion. 
    {2} Eyeball Martinis: Thank you Martha Stewart for supplying me with an ever so creepy but utterly delicious Halloween favorite! 
    {3} Candy Corn: Clearly everyone's favorite treat of the season. It's a total must!
    {4} Giant Fuzzy Spider: Spooky and unrealistically large. Perfect to scare, but not to bad.
    {5} Pumpkins: Duh. What's Halloween without pumpkins? Carve them for outside or use them as centerpieces or maybe even as an ice bucket! 
    {6} Dry Ice: Need I say more? It gives off a spooky smoke so tease your guests by icing their eyeball martinis with it.
    {7} Spiderwebs: To go with that giant spider of course! 
    {8} Skeletons: Personally I prefer black, glittered skeletons that hang on my front door. But, if you can manage to make them look like they are climbing up your building, then props to you because that looks pretty cool!
    {9} Black Candles: Because white ones just aren't creepy.

    Delightful Dining {Pumpkin Seeds}

    Who's carved their pumpkin already? I have! And as I showed you yesterday, it's super spooky scary. Well, if you haven't carved yours yet, there is good news. You now have the opportunity to hear about how I toasted my pumpkin seeds and made them uber delicious! So here's what's up. As you are cleaning out your pumpkin, put all the goop in a bowl. Once you have it all out (and your pumpkin is carved), put it all in a colander and rinse it all off until just the seeds are left. Once you get that far, do this....

    {Step 1} Preheat oven to 300.
    {Step 2} Spread seeds in a single layer on a greased pan and bake for 30 minutes to dry out.
    {Step 3} Place the newly dried seeds in a bowl and mix with olive oil and whatever seasonings you like. Mine have brown sugar, sea salt, chili powder, chipotle seasoning, and ground cumin. It tastes kinda like BBQ.
    {Step 4} Place back on the cookie pan and bake for another 20 minutes. 
    {Step 5} Remove from oven, let cool, and Enjoy!

    The Pumpkin Patch

    It's pumpkin time! A couple weeks ago, R and I made a trip to the pumpkin patch down the street to pick out the perfect pumpkin. And after checking each pumpkin we finally found one that was perfectly round with only one little bad spot. It was the perfect size and was bound to look perfect on our front porch! 
    After lugging it (plus 3 cute little pumpkins) home, it was time to carve. Scroll below to see our super scary pumpkin! And, if you are wondering what to do with the pumpkin guts, come back tomorrow and I'll show you!

    Get Creative {Branching Out}

    You go to a wedding or a party and everybody expects there to be an abundance of flowers everywhere. Well how about this time, there's not. We are going (technically everybody else is in it) into fall, and branches are abundant. And, I'm feeling for my next party I want to walk outside, pick some up off the ground, or maybe rip them from the tree, decorate them and use them as a center piece. How gorgeous would it be to have branches lying on the table with little votive candles stuck between each little branch? I promise that's not considered a fire hazard. Or maybe roll them in glitter and stream crystals through them. Talk about glitzy glam. Seriously, there are a thousand different ways you could use branches, and as long as you branch out, it doesn't really matter.

    This Week I Feel {Southern Affair}

    You've heard the expression, "You don't become Southern, you're born that way." Well today I'm bringing to you a lovely soiree that is Southern to the core. Think less rustic charm and cowboy boots and more modern Gone With the Wind. We're talking mini pies, sweet tea, plantation homes, Georgia peaches, and sweet Southern drawls. Nothing screams Southern soiree than hospitality and making your guests feel at home. And the easiest way to do this is to create an intimate, welcoming setting. The most important though, is all the little details from your escort cards to your location. Bring in your Southern flair with Coca-Cola, Mason jars, bow ties, and sweet tea bars. But, the best part about a Southern wedding is not the details, or even the food, it's absolutely the best time you will ever have!

    Delightful Dining {Pretzel Bites}

    I know these don't exactly look like pretzel bites. They actually look like dough balls. But trust me, they are pretzel bites. And they are delicious. Let's put it this way, this was as many as I could fit in a picture because someone ate them all before I could pull out my camera. And this recipe made a lot! Last weekend a group of us went to this delightful event known as BrewFest. And clearly, with an event such as BrewFest, it is important to put some hearty carbs in your system. These were the perfect solution! Here's the recipe adapted from Smitten Kitten...

    Makes 16 full-sized or 32 miniature or a ton of bit sized pieces
    2 cups warm water (100°F to 110°F)
    1 tablespoon + 2 tablespoons sugar
    1 packet active dry yeast
    5 to 6 cups all-purpose flour, plus more for dusting
    1 tablespoon salt
    2 teaspoons canola or other neutral oil
    1/4 cup baking soda
    1 large egg
    Coarse or pretzel salt
    Vegetable-oil cooking spray

    {1} Pour warm water and 1 tablespoon sugar into bowl of electric mixer fitted with a dough hook* and stir to combine. Sprinkle with yeast, and let sit 10 minutes; yeast should be foamy.

    {2} Add 1 cup flour to yeast, and mix on low until combined. Add salt and 4 cups more flour, and mix until combined, about 30 seconds. Beat on medium-low until dough pulls away from sides of bowl, about 1 1/2 minutes. Add another 1/2 cup flour, and knead on low 1 minute more. If dough is still wet and sticky, add 1/2 cup more flour (this will depend on weather conditions); knead until combined, about 30 seconds. Transfer to a lightly floured board, and knead about ten times, or until smooth.

    {3} Pour oil into a large bowl; swirl to coat sides. Transfer dough to bowl, turning dough to completely cover all sides. Cover with a kitchen towel, and leave in a warm spot for 1 hour, or until dough has doubled in size.

    {4} Heat oven to 450°F. Lightly spray two baking sheets with cooking spray (parchment paper, ungreased, also works). Set aside. Punch down dough to remove bubbles. Transfer to a lightly floured board. Knead once or twice, divide into 16 pieces (about 2 1/2 ounces each) or 32 if making miniature pretzels (I just cut it up into slices, rolled out the slices and cut them into bit sized pieces. Note: They will about double in size when you poach them so cut small.)

    {5} Roll one piece of dough at a time into an 18-inch-long strip.  Twist into pretzel shape (or cut into pieces); transfer to prepared baking sheet. Cover with a kitchen towel. Continue to form pretzels; eight will fit on each sheet (you may need a third sheet if making miniatures). Let pretzels rest until they rise slightly, about 15 minutes.

    {6} Meanwhile, fill large, shallow pot with 2 inches of water. Bring to a boil. Add baking soda (and step back, it foams up quickly) and remaining 2 tablespoons sugar. Reduce to a simmer; transfer three to four pretzels to water. Poach 1 minute on each side. Use slotted spoon to transfer pretzels to baking sheet. Continue until all pretzels are poached.

    {7} Beat egg with 1 tablespoon water. Brush pretzels with egg glaze. Sprinkle with salt. Bake until golden brown, 12 to 15 minutes (I think I had mine in there almost 20-25 minutes). Let cool on wire rack, or eat warm. Pretzels are best when eaten the same day, but will keep at room temperature, uncovered, for two days. Do not store in covered container or they will become soggy (Trust me, they will!).

    * These days, I mix all of my bread doughs by hand, with a wooden spoon. I find it a fantastically easy process, and not very hard to stir by hand. No need to mix for several minutes, just a minute or so after it looks combined. To save even more dishes, I rinse out the bowl, oil it and use it for proofing the dough. And you thought making bread wasn’t simple!

    All Mixed Up {Vineyard Wedding}

    I'm fully aware that this is not a cocktail, but this wedding is inspired by all time favorite drink, wine! Thus, it totally fits under this category. Kinda. Anyways, like any girl, I've been planning my wedding since I was little. Clearly I don't want the same wedding I wanted when I was five. Now, I'm dreaming of a gorgeous vineyard wedding. Being surrounded by vines of ripe grapes, maybe sipping on our own special blend of grapes, what could be better? Plus, as the weather continues to improve and be less stupid hot, it would be amazingly gorgeous to spend an afternoon and evening outside enjoying friends and family at my happiest place on earth (You know after 21 the happiest place on earth changes from DisneyWorld to some place where you are surrounded by tons of adult beverages.)!

    This Party Inspired By...{Think Pink}

    As I'm sure you all are aware, October is Breast Cancer Awareness month. It's something that hits home in my family and the families of a lot of people I know, and I think it's important to take the time to recognize this battle that so many people face and raise awareness for a cause that's incredibly important. And, of course, what better way to raise awareness and inspire those affected by breast cancer than with an all pink party! And since throwing a party for each and every one of you is a little out of the question, I'm doing something a little different. For every new follower, whether it be here on the blog, Twitter, Facebook, or Pinterest, I will donate $1 to the Susan G. Komen Foundation.  So, as we go through the rest of the month, remember those who are fighting breast cancer everyday and always Think Pink!

    Carnival Games

    You've heard me tweeting about it and I've been pinning inspiration for it for months. Well, two weeks ago now, I through a carnival themed bash for this amazing 90 year old woman. But, let me tell you making the teal colored Jacksonville Beach Senior Center look like a  carnival was a task and a half. But, in the end everything turned out amazing! And, best of all, Bennie was beyond happy! Scroll down and enjoy some other images from all the clowning around!

    All Mixed Up {Signature Cocktails}

    So, if you've been to a wedding in the past decade, you've began to realize that signature cocktails are all the rage. But here's what people haven't grasped about signature cocktails yet, they should be original. While yes, your drink of choice may be a Jack and Coke, but who's isn't? I'm thinking it would be totally amaze to go to a wedding where the couple has an original signature cocktail!  Which leads me to the purpose of this post....the Events Uncorked original signature cocktail! Trust me, I'm struggling to come up with something (which is probably why many couple do create original cocktails for their weddings...). So, I'm opening it up to all of you! Leave a comment with a recipe, and I'm going to try them all. Yep, each and every one! And the best one will be featured right here! Things could get a little crazy, but that's the sacrifice I have to make for a good cocktail.  I'm sure you'll ask what I like and what I don't so I'll just cut to the chase and leave you a list below....

    Delightful Dining {Stuffed Peppers}

    So a couple of weeks ago I went on a little trip back home to visit my parents for the weekend. And being the good parents that they are, they sent me home with food! Namely their leftovers, but when your parents are as good of cooks as mine are, then leftovers are a delight! Anyways, they sent me home with these delicious stuffed tomatoes.  And being the food hog that I am, poor R didn't get to eat any of it. Feeling kind of bad for taking all the deliciousness to myself, I decided to try to recreate the recipe but with peppers. I had seriously thought the good cook gene had passed me by, but after this creation, maybe I do have it! Plus these are super easy, quick, and you can add whatever you have in the fridge! Here's what I did....

    For the Stuffing (makes enough for 4 peppers): 
    {1} 1 lb. ground beef
    {2} 1 package taco seasoning
    {3} 1 can Rotel tomatoes
    {4} Brown rice
    {5} Salt and Pepper to taste

    {make it} Start your rice and cook according to box instructions. While the rice is cooking, brown your meat. When the meat is almost done cooking, add the taco seasoning and coat your meat. Once the meat is coated, add your can of Rotel tomatoes.  When the rice is done, mix that in as well. Season with salt and pepper. Stuff your peppers and put in the oven at 350 for about 20 minutes or until peppers have softened. 

    {additions} For those of you who don't suffer from dairy allergies, I do believe that a drizzle of queso on top would be delicious after it comes out of the oven. Or even better, right before you put it in the over, sprinkle some cheese on top and melt it in the oven!

    Get Creative...Escort Cards

    Nothing makes guests want to find their seats less than some tented piece of paper with a name and table number on it. Get creative folks. Come up with something that will make guests run to their tables.  No one said you had to build a bridge for each guest, you can still write their name on a piece of paper. But, make it a pretty piece of paper. And, display it in a cool way. Like these people. I love the geometric, neon, hanging escort card. It's gorgeous!
    No room to hang your escort cards? I love how these were printed on antique tags and woven through forks.  Plus, the best part is the sign.  Did you read it? How cute is that? Taking a completely different approach to escort cards by having no reserved seating! And the "Stake Your Fork" is the cutest play on words I've seen in a while!

    This Party Inspired By...Bars

    If you don't know by now, I love bars. I think it runs in the family. But I have this new obsession of turning everything into a bar. Seriously. I'm talking champagne bar, trail mix bar, cereal bar, hamburger bar, taco bar, s'mores bar. The list could go on forever. And better yet, I have this new plan for my very distant future wedding, a bar theme. It could very well happen. Forget the passed hor d'ourves, I want the cocktail hour to be fill with a mini bar. Ha! Seriously, there was no pun intended there. I want a bar of all things mini. Fix your own mini taco, or slider, or whatever. Then when mini bar hour commences, I would like a full bar spread with who even knows what! I'm completely convinced bars are the party food of the future! Tell me. Love the bar idea or hate it?

    Welcome to Fall

    It is finally fall! And believe it or not, it actually feels like it! Maybe only for a week, but still. It's getting me excited for cooler, but not too cold, temperatures, pumpkin flavored anything, crisp apples, and cinnamon sugar toppings. I can't wait to throw an autumn bash, mainly because I'm really excited to make that pumpkin ice bucket. And even though I know temperature are going to reach the 90s again in a few days, for now I can get excited for shades of burgundy, gold, and oranges. And as excited as I am for fall colors to fill the air, I'm most excited about next weekend's trip to the pumpkin patch! What are you most excited about for fall?
