Indulge In {Irish Soda Bread}


St. Patrick's Day is just days away and it's time to start preparing your menu. One of my St. Paddy's Day staples is always Irish Soda Bread. There are so many varieties out there claiming to be the Traditional Irish Soda Bread but the real one excludes many of the things we commonly associate with it. In this recipe you won't find raisins, orange zest, yogurt, eggs, jalapenos, or even whisky. But, what you will find is a world of deliciousness. Here's the recipe courtesy of Seeded at the Table.

:: Ingredients ::
3 1/4 cups flour
1/2 tsp salt
1/2 tsp baking soda
12 ounces buttermilk


:: Directions ::

1. Preheat oven to 450˚F.  Sprinkle flour onto the center of a baking sheet or stone.
2. In a large bowl, mix all dry ingredients.  Make a well in the center and pour in all of the buttermilk at once. Starting in the center and working towards the outside of the bowl, use your hand to mix, stirring until fully incorporated (takes only seconds). Turn out onto a well-floured surface.  Wash and dry your hands before continuing.
3. Flour your hands and gently roll out dough just enough to tidy it up. Flip the dough over and pat into a round about 1 1/2 inches deep. Place the loaf on top of the floured baking sheet/stone.
4. Using a sharp knife, cut a deep cross in the round loaf, making sure to let the cuts go over the sides of the bread.  Prick the four sections, to “let the fairies out.”
5. Bake for 20 minutes, then reduce heat to 400˚F and let bake for another 20 minutes, or until just cooked. The bread is cooked with it lets a hollow sound while tapping the bottom. Cool on wire rack.

Party Pretty {St. Patrick's Day}


Happy Wednesday! We are half way through the week and half way to celebrating in the green. I already shared how I would be spending my day (hint: sipping whisky and preparing for Rob's homecoming!), but if I were to celebrate any other way, you know it would be in style. I can imagine decorating with each of these chic pieces and dressing in head to toe green. What do you have planned for St. Patrick's Day?

Color Me {Kelly Green}


Happy Monday y'all! I've been so busy with work lately that I completely forgot St. Patrick's Day was coming up on Sunday. I guess that makes me a bad Irish girl. Oh well. Rob will still be in Alaska, so we have no big plans, but that doesn't mean I can't celebrate! I'm imagining spending the day in a bright green number, sipping my last whisky cocktail of the season. I'll snack on Irish favorites like soda bread and potatoes. What do you have planned for St. Patty's Day?

Indulge In {Irish Cream}

We are slowing getting closer to one of my favorite holidays of the year. With St. Patrick's Day a short two days away, it's time to start thinking about your menu. While serving up corned beef and cabbage is a must and a little expected, guests will be wowed when you pour them a glass of your homemade Irish Cream. The best part about this delectable after dinner drink is how incredibly simple it is to make. Combine the ingredients and you are good to go. Of course I made mine with vanilla soy milk, but you can use real milk. If you do, however, be sure to add additional sugar for needed sweetness. Here's the recipe for pouring up all the yummy deliciousness...

:: Ingredients ::
1 C Vanilla Soy Milk
1 C Coconut Milk
1 C Irish Whisky (I used Jameson)
1 C Boiling Water
1/4 C Sugar
2 1/2 Tsp. Chocolate Syrup
2 1/2 Tsp. Instant Hazelnut Cappuccino 

:: Directions ::
1. Boil Water
2. Mix in sugar and cappuccino and stir until dissolved
3. Combine with all other ingredients in serving pitcher and chill in refrigerator until cold
4. Serve over ice with a drizzle of chocolate syrup

Kiss Me...I'm Irish

No really, I am! But, no worries, you don't have to kiss me. But, you do have to help me celebrate in mean green style. One of our family traditions on St. Patrick's Day is to enjoy a meal of corned beef and cabbage and to make up our own Irish prayer. They all get written in a book of Irish prayers we picked up on our family trip to Ireland. It's so much fun to read back through them and see what we have written through the years. While I won't be with my family this year, I still plan on celebrating in style. Decked in green jeans, I'll sport a shamrock on my sweater and indulge in Irish treats. While I'm not a fan of Guinness, I will take a glass of Irish whisky. Not a fan of traditional Irish fare? Not a problem. Put a few drops of green food coloring into drinks and food and make all the other indulgences green with envy.
