Who's carved their pumpkin already? I have! And as I showed you yesterday, it's super spooky scary. Well, if you haven't carved yours yet, there is good news. You now have the opportunity to hear about how I toasted my pumpkin seeds and made them uber delicious! So here's what's up. As you are cleaning out your pumpkin, put all the goop in a bowl. Once you have it all out (and your pumpkin is carved), put it all in a colander and rinse it all off until just the seeds are left. Once you get that far, do this....
{Step 1} Preheat oven to 300.
{Step 2} Spread seeds in a single layer on a greased pan and bake for 30 minutes to dry out.
{Step 3} Place the newly dried seeds in a bowl and mix with olive oil and whatever seasonings you like. Mine have brown sugar, sea salt, chili powder, chipotle seasoning, and ground cumin. It tastes kinda like BBQ.
{Step 4} Place back on the cookie pan and bake for another 20 minutes.
{Step 5} Remove from oven, let cool, and Enjoy!
